Delicious Eggplants and Yoghurt Raita | Baingan Ka Raita

Hello beautiful people, today I am going to share with you a hearty and healthy eggplant 🍆 and yoghurt raita recipe. We call it as eggplant raita or baingan ka raita. So let's get started.
Ingredients for the recipe

- 250g eggplants
- 250g yoghurt
- 1/3 cup water
- 1 tomato 🍅 chopped
- 1 onion chopped
- 1 tsp cumin seeds
- Juice of one lemon 🍋
- 1 tsp salt or to taste
- 1/2 tsp black pepper
- 1/4 tsp red chilli flakes optional
- 1 green chilly, chopped optional
- Chopped fresh coriander
Method for the recipe
Wash the eggplants well and remove the top ends. Chop the eggplants into small pieces.

Add the chopped eggplants into a cooking pot. Add enough water to cover the eggplants.

After adding the eggplants in a cooking pot, bring the eggplants to a boil on medium heat. Boil the eggplants for 15 minutes or until very soft.

Now the eggplants are boiled and have become very soft. Remove the eggplants from the heat and drain the water. Allow the eggplants to cool down completely.

Now the eggplants are cooled down completely. Mash them well.

Take yoghurt and whisk it well. Add water and whisk again until there are no lumps in the yoghurt.

Now let's combine all the ingredients. Add mashed eggplants, chopped onion, chopped tomatoes, chopped green chilly, chopped fresh coriander, cumin seeds, salt, ground black pepper, red chilli flakes and lemon juice. Mix all the ingredients well. Delicious eggplant raita or baingan ka raita is ready to serve. Enjoy!
