Taro Roots Curry |
Ingredients for the recipe
- 1 kg taro roots
- 1 large onion, chopped
- 2 tomatoes, chopped
- 1 tbsp ginger garlic paste/ finely chopped ginger and garlic
- 3 fresh green chillies, chopped
- 1/4 cup freshly chopped coriander
- 1 1/2 tsp salt/ to taste
- 1 tsp red chilli powder/ to taste
- 1 tsp cumin seeds
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric
- 2 + 1/2 cup of water
- 1/2 cup cooking oil
- Water for boiling the taro roots, as needed
- Dried fenugreek leaves for garnish
Cooking Method for the Recipe
Wash taro roots well and add the taro roots to a cooking pot for boiling. Add enough water to cover the taro roots completely. Now cover the pot with a lid and on a medium flame bring the water to a boil. Boil the taro roots for 13 minutes.

After 13 minutes of boiling the taro roots, turn the heat off and drain the hot water form the taro roots. Run tap water to stop the cooking process. Let the taro roots cool down completely.

Once the taro roots cool down completely, start peeling the taro roots skin off. If you remove the taro roots skin after boiling there is almost no itching in the hands. But if you try to peel the skin off without boiling first, there is a lot of itching in the hands. Once the taro roots skin has been removed, chop the bigger ones into 2 pieces each lengthwise.

Take cooking oil in a cooking pot on medium heat. Add chopped onions and sauté until golden brown in color.

Once the onion turn golden brown in color, add cumin seeds and ginger/ garlic paste. Sauté until fragrant.

Once the ginger/ garlic becomes fragrant, add chopped tomatoes, salt, red chilli powder, cumin powder, coriander powder, turmeric, freshly chopped coriander and green chillies. Sauté the entire contents for a minute then add 1/2 cup of water. Put the lid on and simmer for 5 minutes.

After 5 minutes, the tomatoes become completely soft.

Now add the taro roots and sauté on medium heat for 5 minutes until there is a light golden color on the taro roots.

Once there is a light golden color on the taro roots, add 2 cups of water, put the lid on and let the water come to a boil on medium heat. Once the water comes to a boil, cook for 5 more minutes. Then turn the heat off.

Now sprinkle the taro roots with some dried fenugreek leaves. Our delicious taro roots curry is now ready to be served. Dish out and enjoy!
