Ingredients for the recipe
300g chicken, bone-in
- 250g basmati rice, washed and soaked for 15 minutes
- 1 medium sized onion finely chopped
- 6 garlic cloves
- 1 inch ginger piece, julienne chopped
- 6 whole fresh green chillies
- 1 tsp salt or to taste
- 1 tsp black pepper or to taste
- 1/2 tsp turmeric
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 3 green cardamoms
- 1 black cardamom
- 1 cinnamon stick
- 6 cloves
- 1/2 tsp black peppercorns
- 1 star anise
- A pinch of mace
- A pinch of ground nutmeg
- 3 1/2 cups water
- 1/4 cup oil

Heat oil in a pan on medium heat. Add chopped onions. Saute until golden brown in color.

Add cumin seeds, coriander seeds, black peppercorns, cinnamon stick, green cardamoms, black cardamom, cloves, mace ginger and garlic. Saute until fragrant.

Add chicken and keep frying on medium flame until the chicken changes its color to light golden.

Then add salt, black pepper, turmeric, cumin powder, coriander powder, ground nutmeg and mix for another minute.

Stir to mix well. Now bring the rice and stock to a boil again on medium heat and put the lid on.

Reduce the flame to medium low after 10 minutes or when the level of water reduces below to that of level of rice.
